Cauliflower Fried Rice

What am I eating? Cauliflower, the other broccoli. At one time, it wasn't one of my favorite vegetables. I always thought of cauliflower as broccoli's flavorless cousin. No life of it's own. You have to do so much to it to get any flavor out of it. I needed a different strategy. In order to build a better relationship with vegetables, I was on a mission is to turn them into healthier versions of my favorite foods.

You can literally look at raw cauliflower and see it's missing something. Our job as cooks is to incorporate flavor into foods to make them taste amazing. Imagine mashed potatoes without milk, butter and salt. Cauliflower needs major flavor manipulation. It can be through seasoning or preparation, but you gotta get it in there. It's the reason why I shied away from cooking with it for so long. I couldn't figure out what flavor to add to make it suitable for my palate.


Up until recently, I would pass by cauliflower in the grocery store without a second thought. Then one day...all of these variations of cauliflower started popping up. Mashed, riced, flavored with herbs. Ok then...now we're onto something. When I created this recipe I knew immediately that I wanted to get as much flavor as possible without adding too much salt.

I purposely left out the salt and relied on the sodium in the boullion and soy sauce to make up for it. It came out pretty good, and you can add it to any dish as a substitute for rice.

*Always adjust seasoning to your taste. Measurements are approximate and should also be adjusted to your liking.


CAULIFLOWER FRIED RICE RECIPE

  • 1 package steamable riced cauliflower

  • 1/2 cup sliced bell peppers and onions ( or mixed vegetables of choice)

  • Light olive oil or any light oil for frying

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Dash black pepper

  • 1/4 tsp. beef bouillon seasoning (substitute vegetable bouillon)

  • 1-2 tsp. low sodium or lite soy sauce

  • 1 egg (optional)

  • 1 tbsp. sesame oil

  • *Browning seasoning (*optional for darker richer color only. Gravy master brand has less than 1g carbs)

*Add additional protein of choice or enjoy as is.


Prep:

Steam cauliflower in package 1 minute less than stated on the label.

Cut up vegetables

Line up your seasonings


Directions:

Heat oil in a pan

Saute bell peppers and onions in oil. Move vegetables to the side of the pan.

*Add 1 tbsp. more oil if necessary

Add cauliflower to the hot oil.

Season cauliflower with beef seasoning, pepper, onion powder & garlic powder

Add soy sauce and sesame oil. Let cook for 2 minutes.

Move cauliflower to one side of the pan.

Crack an egg and scramble into the empty side of the pan. Mix egg into rice.

Add browning to rice. Stir until rice turns brown evenly.
